I think I have most of the equipment that is required, but I just want to make sure I have pretty much everything to start making better beer.

As far as I can tell, all that is needed is a mashtun, and maybe a separate boil kettle. I have a larger boil kettle and most of the parts for a small cooler mashtun based on the instructions at http://hbd.org/cascade/dennybrew/ (see "Building a Mashtun".

Aside from the proper immersion cooler, is there anything else that I would need to start brewing all grain beers?

A second boil kettle. It only needs to be about 2-3 gallons. Needed for heating sparge water while your boil kettle will contain wort.

I also use a pitcher with marks on it to transfer my water from kettle to the mashtun. Can't wait till I can get a pump.
