Maple-Bacon Chocolate Chip Cookies
May 16, 2009 - 11:11pm
I know this isn't a brewing recipe, but thought I'd post this up here in case anyone wanted to try these. Seemed to be a hit (or just interesting) at the So Cal Brewfest. I will be bringing a batch to the next meeting (5/19) for anyone to try.
Just FYI: They tend to be a very flat cookie when done and if you use an "airbake" brand cookie sheet, they don't come off the pan easily, any other non-stick cookie sheet works fine.

INGREDIENTS
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, room temperature
- 3/4 cup packed brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon maple extract
- 1/3 cup chopped cooked bacon (roughly 3 strips of cooked bacon, I am going to try it with more)
- 1 cup bittersweet chocolate chips (I used regular semi-sweet, works the same)
DIRECTIONS
- Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. (I skipped the parchment paper) Whisk together the flour, baking powder, baking soda, and salt; set aside.
- Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. Stir in the bacon and chocolate chips. Scoop by rounded tablespoonfuls onto prepared cookie sheets.
- Bake in the preheated oven until edges turn golden brown, 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

Hum, can't say I think the same thing.... I love bacon, but bacon cookies? Maybe not so much.

People ask if I take my coffee like my women, and I say, "What?...Passed out in a burlap sack over my shoulder? How do you malke coffee like that?"....
By the way, is tomorrow's meeting a potluck again. If so, are all the meetings gonna be that way now?....

This batched turned out better than the ones I brought to the So Cal Fest... I guess doubling the bacon would do that!!
