Our mission is to educate and assist present and future club members and future generations in the art of fermentation science.


Club Meetings are the 3rd Tuesday of the Month at Blackmarket Brewing Co. at 7 PM.  Social hour at 6 PM.

Guess Ill make the intro

My name is John and Im a Beer-a-holic. I am in a consortium of sorts where we, like you guys make beer. We have 4 under our belts as of tonite and are planning our next few. Currently we have a coule of IPAs done, a Belgian and just dropped our Holiday Ale in the fermenter last week.
We are here in Temecula and are influence by the likes of the following beers, Blind Pig, Pliney the Elder and Maharajah to name a few. We have very ambitious goals of having lots of beer and drinking it :)

But then again who doesnt?

I look forward to meeting all of you guys soon.

There are 4 of us who actively brew.
We have 2 complete 3 kettle setups, 1 standup fermenting fridge, a small chest freezer for storage. We also have a small collection of bottling equip (ie Blichman Beergun, capper etc). We have about everything we need for our own use, but are always looking for more stuff. We are using 2 conical fermenters. One plastic and a stainless unit.

We currently have 2 IPA and a Belgian done. We just took our Holiday Spiced Ale to fermentation about a week ago, it will get kegged for storage until the second week in Dec. We have been doing Partial Mash up until recently. We are making a Barleywine and Oaked Porter next. I plan on doing our own oak. We normally do about 5 gals at a shot.

Theres really nothing wrong with extract, you end to get a caramelly flavor to your end product. We will still use some extract in some of our beer. Its easy as it doesnt take the sparging step.

Extract is perfectly fine. Don't let anyone tell you differently. The Extract "Twang" is a myth.

hey..ive made some perfectly good extract brews and they are only getting better thats for sure..but something about the control u can achieve doing allgrain...thats what i want..just to broke to set up the system i would want.

I never said extract was bad, just that you can tell a beer that has been made with it. ;)

That said, I have a dire emergency to attend to, we are out of beer. Must go brew!
